Cod with Leeks

Cod with LeeksIngredients:
1 cod fillet
1 kilo of leeks
1 bunch of celery
1 cup of olive oil
Pepper
2 eggs
2 lemons
Preparation:
Desalt the cod and chop in pieces. Wash and clean the leeks and the celery. Chop in large pieces and cook in some olive oil until dry. Add pepper and 2-3 glasses of water and simmer until cooked. Place the cod on top of the leeks and celery and cook for 15-20 minutes. Take the pan off the heat and pour the lemon and egg juice (avgolemono), which you’ve made by beating the eggs with the lemon and some of the juices from the pan. You can use tomatoes instead of avgolemono. (Add half a kilo of grounded tomatoes or tomato sauce having first cooked the leeks.)
